Despite the dozen 'dangerous oysters' I downed last fall in Galicia in NW Spain, and the predictable outcome, I'm still a big fan of the crisp and lively refreshers made there, now booming in the U.S. Some of them - Martin Codax and Burgans, especially - seem ubiquitous in wine shops, and there are plenty more where that came from.
